Enchiladas, or as my niece calls them, “Ed-chiladas”, can be a daunting meal for someone that hasn’t made them before. The truth is, enchiladas can be simpler than tacos. Sauce is the part that isn’t easy and that’s why we head to the store to grab a can. I’m ok with that, except I knew that what the stores offered could be better, a lot better! So began my culinary mission, creating the best tasting, balanced, enchilada sauce and now that I’ve perfected it, I want to share it with you!
